You\u2019ll find it in the soil from May through late August. It\u2019s characterized by its beige interior marbled with white, which is why it\u2019s sometimes called the white truffle. However, it\u2019s different from the Alba truffle, also known as the Italian white truffle.<\/p><h2>The Delight of Summer<\/h2><p>Its aroma is more subtle, different from that of the black truffle. The summer truffle is known for its nutty flavor. For foodies, we recommend eating it raw with a pinch of salt\u2014that\u2019s the best way to experience its full flavor. For home cooks, the simplest recipes will bring out its flavor best: in a lamb\u2019s lettuce salad; raw on fresh pasta; thinly sliced and placed on a cod fillet with a drizzle of olive oil\u2026 As long as you don\u2019t cook it, let your culinary imagination run wild.<\/p><p>For a long time, this truffle was mistaken for Tuber uncinatum, the Burgundy truffle, but the latter does not grow in the same regions or during the same season.<\/p><h2>Are summer truffles and black truffles related?<\/h2><p>And yes, land suitable for black truffles can also produce summer truffles. These can coexist, but specifically in truffle fields that are in the process of being phased out (fields that are beginning to produce less, characterized by a high density of above-ground vegetation). The summer truffle prefers an environment with a high tree density\u2014more than 1,000 trees per hectare\u2014unlike the black truffle, which thrives at a density of around 200 trees per hectare.<\/p><h2>Are summer truffles always white?<\/h2><p>Not quite, because throughout its harvest season, its flesh gradually turns brown, changing from creamy white to light brown or even beige. In fact, it reaches full maturity starting in mid-June\u2014a time of year when we begin to enjoy raw vegetables with a nice glass of ros\u00e9. If you want to treat your guests to a delicious meal in less than 20 minutes, here's what you'll need first:<br \/>-100g of summer truffles (from La Truffe du Ventoux, of course)\u00a0<img decoding=\"async\" class=\"emoji\" draggable=\"false\" src=\"https:\/\/s.w.org\/images\/core\/emoji\/2\/svg\/1f609.svg\" alt=\"\ud83d\ude09\" \/>\u00a0)<br \/>-4 slices of bruschetta bread,<br \/>-2 balls of burrata or mozzarella di bufala,<br \/>-Olive oil,<br \/>-Pepper,<br \/>-Camargue fleur de sel,<\/p><p>Before you begin, preheat your oven to 150\u00b0C. Take the slices of bread and brush them with olive oil. Using a pastry brush will make this easier. Set the slices aside for about 6 minutes. Next, drain the burrata or mozzarella balls and wash the tomatoes. Cut the tomatoes and cheese balls into thin slices using a sharp knife. Use a mandoline or a vegetable grater to slice the summer truffles. We always tend to use more than we need, so be careful with your fingers. Arrange the cheese, truffle, and tomato in alternating layers on your warm bread. Drizzle with olive oil, and season with salt and pepper.
